Turkey Pot Pie

Today was one of those working days where you  have to step back and say "Really!!!!!!!!!"
And yes with all those explanation points and a few more.
 
And now that I got that off my chest let's talk about Turkey Pot Pie.
 
Jim and I did the Thanksgiving holiday together at home,  just the two of us.
 I cooked turkey dinner for us and all the trimmings but sadly no dessert as he is not a fan.
  We could have easily fed  a few more.
Okay maybe 10 more.
I bought a 14 pound turkey.  It's the smallest I could find.
I light dark meat  and Jim likes white so turkey breast does not cut it.
So needless to say we had turkey leftovers.
 
We take the paper and the Sunday Parade magazine had a recipe for Oh My! Turkey Pie
I decided this was a good way to use up some of our leftover turkey meat.
And of course I couldn't resist making a few changes to  the recipe.
 
 
The recipe is start forward and easy to follow.
You do need to remember to take your sheet of puff pastry dough out of the freezer about 1 hour ahead of time so it can thaw. 
I sautéed only the onions and added 2 cloves of fresh minced garlic.
I eliminated the carrots and celery and used 1 cup frozen mixed vegetables which included the peas.
I also increased the amount of turkey to 2 cups.
 
I  didn't have the right size ramekins so instead used mini loaf pans I already had.
 
 
The recipe serves 4.
